This is the salad dressing my Grandmother created for her “Garbage Salad”. This salad dressing becomes very rich and creamy once it is tossed with the salad and the hardboiled egg yolks breakdown and are incorporated into the dressing. When my Mom makes hers, she will take one hard-cooked egg yolk and incorporate it into the mayonnaise and vinegar while she is making the dressing, something I just learned on my last family visit to Wisconsin.
This dressing was originally made with white distilled vinegar, but I have been experimenting with a few other white vinegars. I have found I really like Moscatel Wine Vinegar. It is very sweet, so I use half the amount of sugar called for in the recipe below. I have used this recipe as a starting point for making other dressings. I have tried it with Italian seasoning and also with parmesan cheese and fresh cracked peppercorns.

- 1 Tablespoon Sugar
- 1/4 Teaspoon Salt
