Today, with so many cocktails requiring simple syrup, this is a “must have” recipe. This recipe is easy to make, only two ingredients, ultrafine sugar and cold water. There are two methods for making simple syrup.
Some people like to use the heat method, heating until the sugar is dissolved into the water. The way I was taught was to just add the ultrafine sugar to the cold water and stir until dissolved.
Either way, if you’re going to have cocktail parties at home, you will need to have some simple syrup on hand. It keeps in the refrigerator 3 to 6 months, if not indefinitely, as long as you keep it tightly capped in an airtight container.

I think the old fashioned way to make syrup was to bring the water and sugar to a boil and let cool. I like this better.
