About six years ago I found a BBQ Sauce recipe in a cookbook called “A Man’s Guide to Grilling” by Men’s Health Magazine. The recipe I liked the most was created by Ollie Gates who is a second-generation BBQ legend (See Gates Family Kansas City BBQ Sauce recipe below). His recipe gave me the basic ingredients that are in a lot of the BBQ sauce recipes I have created (ketchup, vinegar, sweetener and spices). Over the years I have tried many combinations but I like the Chipotle BBQ Sauce the best.
Chipotle BBQ Sauce
Ingredients
- 2 Cups Ketchup
- 1/2 Cup Apple Cider Vinegar
- 1/2 Cup Apple Juice
- 2 Teaspoons Liquid Smoke
- 2 Teaspoons Lemon Juice (fresh squeezed)
- 1/2 Cup Brown Sugar
- 1 Tablespoon Chipotle Pepper (ground)
- 2 Teaspoons Granulated Garlic
- 2 Teaspoons Celery Seed (ground)
- 2 Teaspoons Sea Salt
- 1 Teaspoon Black Pepper
- 1 Tablespoons Butter
Note
You can substitute chile powder for the ground chipotle pepper.
For more heat add ground cayenne pepper.
Directions
Gates Family Kansas City BBQ Sauce
Ingredients
- 2 Cups Ketchup
- 1/2 Cup Apple Cider Vinegar
- 1/3 Teaspoon Liquid Smoke
- 1/4 Teaspoon Lemon Juice
- 1 Tablespoon Kosher Salt (finely ground)
- 1/4 Cup Sugar
- 1 Teaspoon Celery Seed
- 1 Teaspoon Cayenne pepper (ground)
- 1 Teaspoon Chile powder
- 1 Teaspoon Garlic Powder
Directions
Mix the sugar, salt, celery seed, garlic powder, cayenne and chile powder together in a small bowl. | |
Combine the ketchup, vinegar, liquid smoke and lemon juice in a large bowl. | |
Add the dry ingredients and mix well. | |
Store sauce in an airtight container in the refrigerator. |
