My Grandmother created this salad probably before I was born. I am told she came up with it when she was dieting and would have this salad as her entire meal. My Grandmother would chop whatever vegetables she had on hand along with iceberg lettuce, hard boiled eggs and then mix everything together with her home-made salad dressing.
I can remember having this salad at a very young age and I usually would eat more salad than anything else. My Mom continued serving our family this salad long after Grandma was gone and still does to this day. The ingredients now remain the same as you will see below in the recipe.
Recently, I have starting making this salad with chopped romaine as a healthier alternative to the iceberg lettuce. Today, when I make this salad for other people, many of them go back for seconds.
Grandma Evert’s “Garbage Salad”

Ingredients
- 1 10 ounce bag Romaine Lettuce (roughly chopped)
- 1 Cup Celery (diced)
- 1 Cup Carrots (shredded)
- 1 Cup Cherry Tomatoes (sliced)
- 1/2 Cup Sweet Onion (diced)
- 6 Large Hard Boiled Eggs (reserve two eggs for garnish)
- 1/2 Cup Grandma Evert's Salad Dressing (see recipe below)

- 1/2 Cup Mayonnaise
- 1 1/2 Tablespoons Distilled White Vinegar
- 1 Tablespoon Sugar
- 1/4 Teaspoon Salt
