This Guinness beef barley soup recipe is one of my favorites. I really like the savory combination of the slow cooked beef in Guinness beer, beef stock and bacon. I discovered the original recipe online several years ago, and it turns out the recipe is from a place called County Clare Irish Inn & Pub that is located in my hometown of Milwaukee. I don’t know if County Clare’s still serves this soup because I did not see it on their online menu. I did see they have a soup of the day; maybe they serve it on certain days. Too bad for the people in Milwaukee if they stopped serving this soup; it is really that good!
I have made this soup many times over the years and have modified the recipe a few times. I tried the original recipe, but found that I preferred the soup with just the Guinness beer, so I left out the red wine. I also increased the amount of bacon. I feel you can’t go wrong with more bacon in most any recipe!

Guinness Beef Barley Soup
Ingredients
- 1/2 Pound Bacon (chopped)
- 1 Cup Carrots (large dice)
- 1 Cup Celery (small dice)
- 1 Cup Onions (small dice)
- 4 Cloves Garlic (finely chopped)
- 1 1/2 Pounds Beef (stew meat)
- 8 Cups Beef Stock
- 3/4 Cup Barley
- 1 Bottle Guinness Beer
- 2 Tablespoons Tomato Paste
- 2 Tablespoons Brown Sugar
- 1 Teaspoon Thyme (ground)
- 1 Teaspoon Salt
- 1/2 Teaspoon Black Pepper
- 1/2 Teaspoon Granulated Garlic
- 3 Bay Leaves

I can relate. I usually get the 4 pack of Guinness Draught cans. One is for the soup and the other three are for me.
